The redevelopment of the building known as Merchants Hall as a restaurant/licensed premises involved the lowering of the basement floor. Testing of the basement was carried out in March 2008 and revealed a series of two mortar floors and a short section of rough red-brick wall underlying the modern concrete floor. By agreement with the Guild Merchant, the owner of the adjacent building, Francis Mills, built the basement into Merchant Hall in 1821/22 for use as a wine cellar. It is suggested that these features were associated with this use of the basement as a wine cellar.
